The restaurant is his first in Australia and will be opened as "Orexi by Baxevanis" in September this year. He uses his culinary skills to also assist high-end restaurants in Dubai, South Africa, and even in Switzerland as a consultant, and is well-known among locals in Greece.
The Hellenic Club is undergoing a major refurbishment, which club President, Andrew Satsias said was a first for this industry. Opening the restaurant is only part of a $2,000 000 project and hope that the addition of Baxevanis' restaurant will add something special to offer the club members and the Canberra community.

Satsias said they are the first among local clubs to use a high-profile, talented and globally focused chef."" He realizes that along with the upgrades to the facilities; they will also constantly need to come up with innovative food and beverages to stay ahead. Staff will be kept busy trying to invent new and exciting dishes.
Baxevanis' business partner, Joanna Stavara will be responsible for the day to day running of the restaurant in Canberra, while he will oversee the menu and make regular visits to the restaurant.
